Zencart / Matrix - Option Values Updates Fails

I have tried to update the prices of images in my gallery using the gallery options values section where I am able to delete existing options but unable to add new prices. this has caused major issues, as although I can copy option names and values in the Zencart control panel and update existing products, whenever a new album loads it does not have these options by default. As I have over 100 users who can add images, it makes it very awkward if I have to continuously monitor them when new albums are loaded. Is there a way I can reinsert these options and values via the database that would hopefully avoid the page crashing? When trying to add new option values via the Gallery control panel I get the following error;
