I'm considering using Checkout.
Where is the code?
Can I use it without Paypal, simply as a way for clients to pick what photos they like? Or is there a simpler way than Checkout?
What will happen with Checkout when Gallery 3 becomes stable?

The code is available from the repository. Installation instructions are included in the documentation, here:

The payment modules are independent; you can use any or all of Paypal, Google, a UK-based webpayments system called Nochex, or accept payment by cheque. If you don't install any payment module then there's no way to complete an order.
You could try using it as a simple way for clients to pick what photos they want, but that's not its design goal, so you may find it awkward and clunky and full of inapplicable options that make no sense. Checkout is designed exclusively for selling photos for money. You might find the "cart" module is simpler for what you want.
Gallery3 is already released and stable; nothing will happen with Checkout, it continues to work just as well as it did before. But note it's only compatible with G2, not with G3.
