Greek Language pack utf-8 to iso-8859-7

Hello guys

Many thanks for the nice product that you made
i just installed the gallery and integrated it into mambo
my only problem is that i have the greek language pack for gallery but it is in utf-8
so my question is how can i change the encoding from utf-8 to iso-8859-7
