You can completely delete a tag by logging in as an administrator and clicking on the Admin->Content->Tags menu. From there you can click the trash can icon to delete it. This will completely remove the tag though, I don't thing there's currently a way to untag a single photo.

Click on the photo, Options > Edit Photo > remove any tags you don't want from that photo.

This feature on editing individual items has only been recently added. So if you don't see this you need to upgrade tothe latest git version.
