Quantity and Duplicate Items

Hi. I've been banging away on a stock photo site for weeks. Ive found my way through almost everything and I'm hung up on two items I hope someone can help with. Since its stock photography, the user will only ever need one of each image purchased. The question is two fold: 1. How can I lock the quantity shown in the attached screen shot?
