Is it possible to have the postage be made a custom field, and also have the text be made editable,..?
I would like to charge different prices for different galleries,...!??
Is this something that can be paid for through paid support,..?
Or is there another way around this,.?

You can't have postage as a Custom field, because custom fields apply per album/photo, but postage applies just once to the whole order. You have to decide what to do when the basket contains items from a variety of different albums each of which has different postage settings. And what to do when a user removes an item, having already chosen a postage option. And other situations.
Checkout 0.3.3 includes the options for user-written postage modules that can adjust postage costs based on any criteria you like. So you/I could write a module to do whatever you want. The programming is the 'easy' part, but deciding in detail what the behaviour should be for all corner cases is difficult.

I'm tempted to install Checkout 0.3.3,.. and i might after this one job has been finialised,..
The main thing is i want to charge my call out fee through the gallery system as well..! So i was thinking of using the postage concept,.. but change the text to "Service Fee",.. or something like that..! So they can pay for everything online and download the files.. If they loose the file and need to download it again, they can pay for it..!
I'm a bit cautious about installing the beta,.. but by the sound of things it's close to being okayed,..!??
I would consider a service to personalize the gallery system to my needs, though... even if it's a install and tweaking of the beta3,.. is that something i can log through the paid support service,..?

You could (or I could) write a special module to add a shooting fee to each order - it doesn't have to be instead of postage.
I use the current code on two websites. There may be some further defects, but nothing dreadful that will stop you taking orders. Really I'm waiting for time to include some more translations into the module before uploading it to the repository - there isn't a formal 'OK' process for community modules.
PM me with what you need personalised - I don't think that the paid support service will modify the checkout module for you, although I could.
