Gallery 3.09 fresh install, all modules default...
Operating system: Linux 3.11-2-amd64
Apache: Apache/2.4.6 (Debian)
PHP: 5.5.7-2
MySQL: 5.5.33-1
Server load: 0.31 0.18 0.14
Graphics toolkit: imagemagick
Can I have the images display 'as is', without resizing ?
I'm not sure where the /gallery3/var/resizes directory came from ?
Can I delete all those images inside the 'resizes' if I configure (how to ?)
Gallery3 to not resize images ?

Do I understand correcly ?... if I set the max size in gallery to 1024 wide,
and all my images uploaded do not exceed 1024 wide, then gallery will display
an unaltered copy of my original uploaded image ?

By default a resize image is created. If you want different behavior you have to edit as the link suggests.
A resized image is created even if the resize size is larger or equal to the uploaded original size.

Is the 'resize' image gallery creates a copy of the original 1024 (same size) ?
I'm not clear after reading the link if it is at all possible to display
the original uploaded image or an unaltered copy or not.
Can I use gallery to display my original uploaded image or a 'resize' exact copy
of the original without changing the size of the original ?

Yes.
Not without altering code.
Both.
A copy of the original is used for the resized view and the original is used for the full sized view.
If you ant to use the full-sized image then you will have to alter the theme as the link above describes.
I don't know how to describe it any better. The software was designed to have 3 images. One thumb, one resized and the original. If you want to eliminate the resized version and only use the thumb and fullsized image then you will have to alter the theme and make manual deletions of the resized images.
You would fit into the less than 10% rule. Perhaps gallery is not for you.

I'll pursue changing the code to display the original instead of a copy as you
recommended, thank you for trying to make it easier to display the original.
I like gallery a lot. I believe 'Quality' professionals demand quality, so
it's nice to know gallery has the ability to display the original image unaltered.
90 percent of the people I work with demand high quality.

Just for clarity the full sized image that is shown is the origianl. The defalt theme shows the fullsized original image in a bodal window when you click the resized image.

Does that mean that when a user clicks on a thumbnail, the resized image will appear first,
then if they click on the resized image, the uploaded original will display. ?
Since I'm using a non default theme (GreyDragon) without slideshow or shadowbox/fancybox
does that mean each different theme could have a different image displayed when you click
a thumbnail (original/resized/uploaded) ?

Yes.
Different themes can have different behaviour. In general most themes have the same behaviour as the default.
Viewing the source of the page you are viewing will show where the image originates (resize,full(original), thumb)
