Server upgrade to PHP 5.3.6 caused Gallery 2.3 to bomb

I've only just discovered that this php upgrade to 5.3.6 has negatively impacted the Gallery2 script installed on www.bonnietarses.com/new-gallery.

You are *required* to use the date.timezone setting or the date_default_timezone_set() function. In case you used any of those methods and you are still getting this warning, you most likely misspelled the timezone identifier. Is there somewhere we can just fix the timezone settings? Or is there any other way to fool the script to working?
Assuming I have to upgrade is upgrading to 2.3.1 adequate or do I need to upgrade all the way to the newest 3.x?
I haven't touched Gallery in a long time so I'm rusty. Thanks.
